A Princess Playdate

20130523-155743.jpgI don’t remember being as into Disney Princesses as my girls and their friends are.  Every play date it’s a battle of who gets to wear what princess costume and there are never duplicates of the same princess.  The other week, my daughters friend invited us over for a “Princess Lunch and Playdate”.  All the girls invited brought their own princess dress up costume.  I always like bringing snacks when other people have us over and I love coordinating the snacks if there is a theme.  Because it was a last-minute playdate, I had to come up with something quickly.  I decided on heart cheese wands for each princess.  They turned out really cute.  All you need is a block of cheese, a cookie cutter (if you don’t have a heart, a star would be cute too), lollipop sticks and ribbon.  Tie the ribbon around the lollipop sticks.  Next, slice the cheese to desired thickness, then cut out shapes. Place shape at top of the stick.  If you cut the cheese too thin it will crack.  I used sharp cheddar cheese but will use a mild or american cheese next time because some of the kids didn’t like the taste.  However, Sleeping Beauty didn’t mind it. :)

National Blueberry Pancake Day!

Today is National Blueberry Pancake Day!  Cooking activities are an excellent way to keep kids busy on cold, rainy or snowy days like today.  Whip up some blueberry pancake (a few recipes below) with your child and eat them for lunch, snack, dinner, dessert or save them for breakfast tomorrow.

A few recipes:

1. Keep it Simple Blueberry Pancakes:  Perfect for when you are in a rush or need a simple activity for young children.  For 5 pancakes: Use  1 cup Aunt Jemima’s Original Complete Mix, 3/4 cup water, 1/4- 1/2 a teaspoon of vanilla extract.  Mix together in a bowl or we mixed in a measuring cup to make pouring the batter on the pan easier.  While pancakes are cooking, place blueberries in batter. Use as many or as little as your child would like.  My older daughter added chocolate chips for an extra sweet treat!

The new school year is just around the corner, I have been on the look out for food to go in my daughters lunch bag that would be safe to bring to school.  My family and I recently tried Enjoy Life Foods: Plentils Crunchy Lentil Chips in four DELICIOUS flavors: Dill and Sour Cream, Lightly Salted, Margherita Pizza, and Garlic and Parmesan (my favorite).  The texture of the chips reminded me a little of a pork rind.We loved every flavor.  Each crunchy, salty, and flavorful chip makes you want to go back for more.  It was no wonder why it was easy to finish the four bags.  I found my girls and my husband sneaking handfuls in the kitchen.  I eventually had to hide the bag from my 2-year-old because she would have eaten an entire bag at once.

Enjoy Life: Not Nuts Seed and Fruit Mix {Review and GIVEAWAY}

I have been fortunate to try Enjoy Life foods: cookies, chocolate chips, granola and recently their line of Seed and Fruit Mixes.  When you have a child with a food allergy, your entire life and eating habits have to change.  I can no longer have anything with NUTS in the house and I spend way too much time at the grocery store reading labels.  Until I received, Enjoy Life Seed and Fruit Mixes, I forgot how much I missed snacking on Trail Mix.  I never thought about trail mix because I knew it was usually loaded with nuts and it was a NO NO in our house.  Thanks to Enjoy Life, I can have that sweet and salty mixture that I love and miss so much.  Their Seed and Fruit Mix is a great alternative to Nut Trail Mix and it has become my go-to snack for throughout the day.  I had a difficult time getting the girls to eat it because Maddie insisted that seeds were for planting and not for eating.  I eventually got them to try it by adding some goldfish to it.

Mountain Mambo: Made with sunflower seeds, pumpkin seeds (pepitas), fruit (raisins, apples, and cranberries) and chocolate chips.  I enjoyed this one too especially when I got a chocolate chip in my bite.  I added it to my greek yogurt and it was surprisingly a good combination.  It is also yummy on its own as a quick and easy on-the-go snack.  Be careful about where you leave your mix because the chocolate chips will melt and create clusters of seeds. GREEN*UNIQUE*SANDWICH

We go through sandwich baggies like crazy in our house.  I use them for snacks and sandwiches for the girls when we are on the go, meeting friends for a picnic in the park, and when Maddie brings lunch to school for days she stays after.  Not only do I use them for food, but I use them to store Maddie’s play jewelry and small parts to her toys.  I throw out so many bags because I have used them for food or they are ripped easily when the girls play with the toys.  I was on Etsy today and stumbled across handmade reusable sandwich bags by WasteNot Saks.   All bags are hand made with a cotton exterior and a nylon interior and are machine washable.
